Microwave/Oven Info

  1. Conventional Oven

    • Usually, these ovens are cheaper
    • Can cook fragile pastries unlike convention
    • These ovens can't cook large amounts of food proportionally.
      • Top rack will always be hotter then lower rack due to the heat rising in the air
    • These ovens are able to cook more fragile foods unlike convection ovens
    • These ovens can't cook large amount of foods proportionally
      • The top rack will always be hotter then the lower rack due to the heat rising in the oven.
        • Items in the item don't brown as fast and don't get a nice crisp taste compared to convection ovens.
  2. Convection Oven

    • Cook faster then Conventional ovens by 25%
      • The oven is the same as a conventional but has a fan in the back to cycle in air and put air back
        • Food browns evenly and can bake on three racks porporionaly
        • RULES
          • Must cook 25 degrees lower then you would do on a conventional oven.
          • Use a pan that is more shallow or low ended.
          • Use bakeware that is light or bright
            • This makes food more crisp and enhances the heat inside
    • Rules
      • Always cook foods either 20 degrees lower or 25% of the original time.
        • Need to use light colored or round edge trays to allow a nice crisp taste
    • Same as Conventional but has a fan in the back of the oven to allow the heat to process everywhere in the oven
      • Can cook on all three racks and brown/cook evenly
  3. Microwaves

    • a Magnetron on the top of the micro wave starts to make heat waves within the microwave
      • A stirrer then mixes the heat into the main part of the microwave
        • Microwaves bounce off walls until it enters the food
          • The microwaves go an make the water molecules spin and spin very fast and cuse friction
            • Food has heat in it, so when you take out of the oven it does not stop cooking.
    • Steps
    • Can place towel on foods to prevent it from spitting and won't get ruined
      • Microwaves can be uneven, meaning some areas may cook faster or better than others.
        • Food such as noodles, rice and bread don't cook well to at all in a microwave.
  4. ALWAYS USE MITTENS WHEN TAKING OUT DISHES IN OVEN!

  5. Use glass, ceramic or plastic safe dishes that are safe in an oven!

  6. Bigger food = larger cook time Smaller amounts = smaller cook time
