Microwave / Convection Mind Map

  1. Convection Oven

    • magnetrons produce short radio waves called microwaves
      • Water molecules are dipolar
        • One end of the water molecule has a positive charge and the other end has an equal negative charge
          • When the water is constantly moving its causing friction and causing heat
            • In a convectional radiant oven there is a heat source on the top and the bottom
              • A convection oven has three heat sources on the top bottom and back
                • There is a fan in the back of the convectional oven that sicks the air back into the heating element and then back into the oven
                  • You need to set the heat on a convectional oven 25 degrees less than you would on a conventual oven
                    • Cooking with a lighter pan and a light colored pan will cook food better
                      • You can cook food 20 minutes faster in a convection oven
  2. Microwave

    • In microwave the waves travel through a wave guide
      • The waves from the microwave bounce off the walls and the food absorbs it
        • The water molecukes in he microwave act as tiny magnets
          • It's bad to put silverware in the microwave becasue the waves cannot travel through metal
            • Food colder than room temp takes longer to cook
              • Steam can build up and cause your food to explode
                • Use glass ceramic and some plastic to cook stuff in the microwave
                  • Food will not have time to brown up before its done cooking
                    • Turn or mix food inside the microwave to make sure that everything gets cooked evenly
