  1. The coagulation of milk in infants is done by the enzyme Rennin
    1. This is important as it stops the rapid passage of milk through the stomach of small mammals (calfs). NO DIGESTION OF PROTEINS
      1. In the presence of calcium ions Rennin irreversibly changes casein (milk protein) into paracasein as that pesin can act upon it
        1. More active in acidic conditions of the stomach
          1. Rennet is the name given to any ezymatic preparation that coagulates milk
            1. Proteolytic enzyme
