1. The coagulation of milk in infants is done by the enzyme Rennin

   • This is important as it stops the rapid passage of milk through the stomach of small mammals (calfs). NO DIGESTION OF PROTEINS
   • In the presence of calcium ions Rennin irreversibly changes casein (milk protein) into paracasein as that pesin can act upon it
   • More active in acidic conditions of the stomach
   • Rennet is the name given to any ezymatic preparation that coagulates milk
     • Proteolytic enzyme
