西红柿炒鸡蛋 1.锅烧热,入油,也就是热锅冷油 2.入洋葱碎中小火慢慢煸透,煸香。将煸炒的完全透明的洋葱碎捞出不要,只留葱油 这是这道菜最后是否鲜香的关键步骤之一哦,要耐心                 3.鸡蛋磕出,用力搅打,直到停下来发现蛋液面全部布满泡泡,足够蓬松才可                                4.蛋液中加少许盐,继续打发一会,静置备用                           5.锅内葱油烧热,倒入蛋液 炒蛋的火要大,不好判断的时候可以用筷子沾一点蛋液探进油里,马上起泡膨胀开油温就可以了 如果油温过高,可以先离火或者倒一点冷油稍稍降温 如果用的锅是铁锅等非不粘锅,那么油要记得稍微多放些,火候到了,其实不必担心会太过吸油 6.蛋液倒入锅中,不要着急翻炒,然后让它煎一会直至边缘凝固 这样煎出蛋既保证了弹性,成型也更好看                                    7.将鸡蛋炒散,盛出备用 此时,鸡蛋已经完全吸收了葱油的鲜香 8.准备一些蒜末、姜末               9.西红柿洗净,切片 10.锅内放少许油,煸香姜、蒜末 11.倒入西红柿翻炒                  12.调入一些料酒 13.调一点糖 这里放少量的糖更能激发番茄自然的酸甜味,以吃不出糖的甜味为宜 14.当番茄有些出汁的时候,撒一些盐调味
