1 Proteins and carbohydrates
1.1 Protein molecules in eggs and meat permanently change shape when eggs and meat are cooked
1.2 This changing of shape is called 'denaturing'
2 Baking powder
2.1 Baking powder is sodium hydrogencarbonate
2.2 When it is heated it breaks down to give carbon dioxide
2.3 Sodium hydrogrencarbonate = sodium carbonate + carbon dioxide + water
2.4 2NaHCO3 = Na2CO3 + CO2 + H2O
3 Emulsifiers
3.1 Emulsifiers are molecules that have a water-loving part and an oil or fat-loving part
3.2 The oil or fat loving part goes into the fat droplet
