1. Definition

   • It's a set of measures aimed at insuring food is consumed fresh and will not cause illness.

2. Food safety in the supply chain

   • Stages in the supply chain
     • Production
     • Packaging
     • Storage
     • Sale
     • Transport

3. Production and Packaging

   • During these stages,the food is exposed t o preservation methods,not to be spoiled.
   • The materials that are in contact with the food must be clean .
   • The people that works in the supply chain, must wear appropiate and protective clothes.

4. Storage and Transport

   • During the storage and transport stages, the food must kept in anappropiate temperature and humidity.Also they have to be separated one products to the other.

5. Sale

   • Staff working at distribution points and points of sale must also follow food safety regulations.
   • The place were the product is stored must be clean and must be out of the animals and insects contact.
   • Food are required to have a label tha tells information about the product.
