  1. They have higher boiling points than water, so can cook foods at higher temperatures and faster
    1. It gives food a different flavour, because of its own flavour, but it's also down to the fact that many flavours come from chemicals that are soluble in oil, so the oil carries the flavour, making it seem more intense
