How do we extract oils from plants? By pressing or distillation
What is pressing? When oils are crushed out of a plant
What is distillation in plants? The plants are put into water then boiled, the oil then separates from the water and plant
What are unsaturated oils? Oils in which the hydrocarbons have double bonds, we can detect the double bonds using bromine water
What are the advantages of cooking with vegetable oils? They have high boiling points
Do oils dissolve in water? no
What is an emulsifier? A substance that helps oil and water join together.
How does an emulsifier work? The head of the emulsifier molecule likes water (Hydrophillic) and the tail doesn't like water (Hydrophobic). So the head of the molecule latches itself onto a water molecule and the tail latches onto the oil
What are emulsifiers used for? To create emulsions used in body lotions, food, lip sticks and face creams
