4 Test for Non-Reducing Sugars
4.1 Must be in solution
4.1.1 Add Benedict's regent and heat

4.1.1.1.1 Reducing sugar not present
4.1.1.1.2 Add food sample to dilute HCl + heat
4.1.1.1.2.1 This will hydrolyse any disaccharide present into constituent monosaccharides
4.1.1.1.2.2 Add sodium hydrogencarbonate solution to neutralise acid
4.1.1.1.2.2.1 Benedicts doesn't work in acidic conditions
4.1.1.1.2.2.2 Test with pH paper
4.1.1.1.2.2.2.1 Re-test with Benedict's
4.1.1.1.2.2.2.1.1 Heat
4.1.1.1.2.2.2.1.1.1 If a non-reducing sugar present in original sample, Benedict's will turn orange/brown
4.1.1.1.2.2.2.1.1.1.1 This is due to reducing monosaccharide's made from non-reducing disaccharide
