About Menu Planning and Design
GoConqr OriginalWhat this unit covers
Menu Planning and Design sits in the strand The Professional Kitchen and Service, within Cooking and gastronomy. The listed resources come in two kinds. Some are planning tools, and many are real restaurant menus broken into study sets.
The planning material includes a flashcard deck on planning a catering menu. It works through nutritional balance, colour, flavour, texture, time of year and the skills of the chef. The mind map Café Culture splits a café offer into seasonal, sweet and savoury items, then looks at target market and diets such as sugar free, gluten free, vegetarian and dairy free.
Menus turned into study sets
Most flashcard decks and quizzes are built from working menus. Black Forest Brew Haus Menu uses fill-in-the-blank cards, such as the loaded potato pancakes and the flamecake. Other decks split a chophouse menu into starters, entrees or specialties, sides and desserts. A note on sandwiches and burgers lists each item with its ingredients, for example an ahi tuna club with tarragon remoulade and brioche bun.
Quizzes such as Dinner Menu Quiz, Food Knowledge and Test your Knowledge - Steak check whether you can recall dishes, ingredients and descriptions.
Mind maps for planning real menus
Several maps tackle a brief: a three-course meal plan, a celebratory ball menu, an aged care lunch, vegetarian meals, dishes for children and winter flavours and dishes. They show how a menu is shaped around an occasion and a guest group.
A sensible order
- Start with the catering planning deck to learn the factors that shape a menu.
- Open Café Culture to see those factors applied to a target market and diets.
- Move to a restaurant deck, such as the starters or desserts sets, and learn the dishes.
- Take a menu quiz to find what you have not yet memorised.
- Finish with an occasion-based mind map and plan a short menu of your own.
Using quizzes and maps together
Use a map to decide what a menu needs, then use a quiz to check you can describe each dish accurately. If a quiz exposes a gap, go back to the matching deck. School students can start with the simpler planning decks. University students and professional candidates can compare how different venues structure their menus. Teachers can set a deck or map as a ready-made starter task.
When you are ready, pick one menu that interests you and try its quiz.
Frequently asked questions
Where should I start on this page?
Start with the flashcard deck on planning a catering menu. It covers nutritional balance, colour, flavour, texture, time of year and the chef's skills. Then open the Café Culture mind map to see those ideas applied to a target market and different diets.
What do the mind maps cover?
They cover menu planning for particular guests and occasions. You will find maps on vegetarian meals, an aged care lunch, dishes for children, winter flavours, a celebratory menu and a ball menu. Café Culture looks at seasonal, sweet and savoury items and dietary needs.
Are the quizzes based on real menus?
Many are. Quizzes such as Dinner Menu Quiz, Test your Knowledge - Steak and the appetizer, pasta and entree tests ask you to recall dishes and ingredients from restaurant menus. They suit anyone learning to describe dishes accurately.
Who made these resources, and are they free?
The resources were made by GoConqr users, not by GoConqr, and over 90 contributors have added to this page. Every resource is free to open, study and take, with no account. A free account also saves your quiz scores and lets you make your own.
Which levels is this page suitable for?
Most resources are pitched at university students and professional candidates, with a good share for school students. Teachers can use the decks and maps as ready-made material. No exams are named in the listed resources.
What if the menu I need is not here?
Use the planning deck and the Café Culture map as a template, then build your own flashcards or mind map for that menu. Existing decks, such as the starters, sides and desserts sets, show a clear way to organise it.
